These combined courses contains four sets of the following interest classes:

  • English Patisserie A (Cake) 
  • English Patisserie B (Bread)
  • English Patisserie C (Pie & Tart)
  • European Sourdough Bread (English-Taught)

You can apply individually or these combined courses.

EPATIA - English Patisserie A (Cake)

Introduction:

  • Students can understand the basic pastry theory and get familiar with the basic baking technique. After completion of this course, students will acquire the basic cake baking skill.

Content:

  • Tahini/Peanut butter Brownie and Blondie
  • Sponge cake with Strawberries and Chantilly
  • Chocolate Swiss roll Cake
  • Chocolate cake with Buttercream
  • Coconut cream cake with kaffir lime
  • Bundt Lemon olive oil Cake with Lavender icing
  • Chiffon cake with lemon-orange buttercream
  • Red Velvet Cupcake with cream cheese frosting

Instructor:

  • Chef Luisa Dalla Chiesa is one of the chef instructors at our school. She teaches with great charisma and professionalism. She has a comprehensive knowledge in pastry and savoury.
    Graduated in Culinary Arts, she specialized in European Cuisine and Management of Bars and Restaurants.
    She has been in the F&B industry for over ten years. She has worked as a Head Chef in Brazil in Italian and Brazilian restaurants, Chef Consultant, Private Chef, Catering Services and as a Culinary Instructor.
    She's currently living in Hong Kong since 2018, working in different places such as Black Sheep Restaurants, Louise (Michelin Star restaurant) and others.

Course Arrangement:

  • 8 lessons, 3 hours per lesson

  • Medium of Instruction: English

  • Maximum no: 16

  • Assessments: Not Applicable

  • Awards: "Attendance Certificate in English Patisserie A" (Attendance: 75% or above)  Award will be issued within 3 months.

Introduction:

  • This course will focus on the basic bread baking techniques and their usage.  Content includes: direct method, sponge-dough method, refrigeration method, etc...  The course will also include the introduction of different yeasts and their usage.  After completion of this course, students will be able to acquire the basic bread baking skills.

Introduction:

  • This course will focus on the basic pie and tart baking techniques.  Students will learn how to use different dough to make different flavor/style pie and tart.  Students will also learn how to decorate and how to change the ingredients.

  • French Pear Tart
  • Salty Caramel Banana Cream Tart
  • Chocolate Espresso Tart
  • Quiche Lorraine and Onion Confit
  • French Apple Pie
  • Creamy Chicken Mushroom Pie
  • Homemade Orange Ricotta Pie

European Sourdough Bread

  • Student needs to prepare the following items and deposit on the start day.

    • Two new kitchen clothes with different colours$12

Introduction:

Students can learn different methods of producing sourdough breads and their products.
 

Content:

Week one: Biga Sourdough, Walnut Bread, Sausage topped Bun, Sourdough
                          Sourdough Bread, Calzone, Banana - Okara Muffin

Week Two: Poulish, Sourdough Rye Bread, Quiche Lorraine,
                   Pancetta Sourdough Bread, Stromboli, Black Olive Ciabatta

Week Three: Baguettes dough (autolyze), Black Cherry Crumble, English Muffins
                     Process/ Bake Baguettes, Ciabatta, Flammkuchen

Week Four: Pain a l'ancienne (dough), Sourdough Carrot Cake, Scones
                   Shortbiga Sunflowerseed Bread, Sourdough Pizza, Bake Pain a l'ancienne

Remark: Theory content will be inserted during the class when there is a downtime.
               Several products will be done over two days.
               Some of the Sourdoughs will be done before the class to manage the time constrains - and requirement.
               Small changes may be done if deemed necessary for a better flow or processing reason.
               Late completion time might happen, as timing is a crucial factor in this class.
